Good info, I went through the National Wine School to get certified, I didn't feel I needed to learn about serving because I just wanted to learn more about wine and food pairings. Court of Masters is impressive to say the least as well as WSET. I like writing down the wines I've tried as you suggested too, it gives a look at the style you might like as a wine drinker. Before I took the certification I was doing this subconsciously gravitating towards Oregon Pinots which eventually took me to Burgundy. Good stuff
